Zucchini with Garlic, Thyme, and Dill

Fresh thyme from my little herb garden and dill from my local farmers’ market adds a nice flavor to the zucchini in this recipe. It makes a great side dish to grilled chicken.

Serves 4

Ingredients

  • 12 young zucchini , halved lengthwise

  • 4 garlic cloves , minced

  • 1 tablespoon fresh thyme leaves , chopped

  • 1/2 cup fresh dill , coarsely chopped

  • Juice from one small lemon

  • 1/4 cup extra-virgin olive oil

  • Sea salt and freshly ground black pepper

Instructions

  • In a medium cast-iron skillet, heat the olive oil over medium-low heat. Add the garlic to the skillet and cook for 3 minutes, stirring. Increase the heat to medium-high, add the zucchini, season with salt and pepper, and cook for 6-7 minutes or until they are tender, stirring. Add the dill and lemon juice and cook for an additional minute, stirring. Remove from the heat.

  • Transfer to a serving platter. Serve immediately.
